Tricoloured Puttu /Carrot & Beetroot Puttu

For Beetroot Puttu
Rice powder-1cup
Beetroot(finely grated)-1small
Salt
Water

For Carrot Puttu
Rice flour-1cup
Carrot (finely grated)-2 medium
Salt
Water

For white Puttu

Shredded coconut-3/4cup

  • Take rice flour in 3 separate bowls.
  • Mix  rice flour with salt and shredded coconut.  Pour some water and mix with fingers. The correct texture is when you grasp a palm full of flour and it seems to hold together but when gently touched, it looses shape.
  • Add grated beetroot and salt into the flour.Pour some water and mix with fingers so that it look like bread crumbs.Keep aside.
  • Continue the step above with carrot and rice flour.
  • Put a table spoon of shredded coconut in the 'puttukutty'.Second layer with beetroot mixture and sprinkle some grated coconut.Third layer with white puttu mixture and top with carrot mixture.
  • Steam it for 5 mins and serve hot with the side dish of your choice.
