Apple&Carrot Muffins



1.All purpose flour-1&1/4cup
   Baking powder-1tsp
   Salt-a pinch
2.Eggs-2
  Sugar-3/4cup
  Refined oil-1/2cup
3.Yogurt-2tbsp
4.Apple(grated)-2
   Carrot(grated)-1



  • Preheat oven to 175 degrees.
  • Beat eggs and sugar until light and fluffy.Add in refined oil and beat well.Add flour and yogurt.Stir until just blended.Gently fold in the grated apples and carrots with a spoon.
  • Fill muffin cups 3/4 full.Bake until golden or a toothpick inserted in the center comes out clean.(about20 22 minutes)

Cinnamon Palmiers (Elephant Ear Cookies)



Puff pastry sheets-3
Sugar-1cup
Cinnamon powder-1/2tbsp




  • Preheat oven to 200 degrees.
  • Mix sugar with cinnamon powder.
  • Line baking sheet with parchment paper.
  • Sprinkle 1/2 cup sugar on a clean surface.Place puff pastry sheet on the sugared surface and sprinkle 2tbsp of sugar-cinnamon mixture over the sheet. Press gently with a rolling pin until the sugar is pressed into the puff pastry sheet on top and bottom. Roll each side inward until they meet in the middle.

  • Refrigerate for 30 minutes.
  • Cut pastry into strips about 1cm thickness.

  • Bake at 200 degrees until sugar has caramelized.(about10 minutes)
  • Transfer to a rack and cool.

Egg Kothu Porotta



1.Porotta-3
2.Egg-2
3.Onion(chopped)-2
   Ginger(chopped)-1ts
   Garlic(chopped)-1tsp
   Green chilly-2
4.Carrot(chopped)-1small
    Frozen green peas-a handful
   Tomato(chopped)-1small
5.Turmeric powder-1/4tsp
   Chilly powder-1/2tsp
   Garam masala powder-1/4tsp
6.Coconut oil-1tbsp
   Mustard seeds-1tsp
   Curry leaves-2springs
7.Salt





  • Cut porotta into small pieces.
  • Heat oil in a pan and sputter mustard seeds.
  • Add onions,ginger, garlic,curry leaves and green chilly.Fry till translucent.
  • Add masalas and fry for a minute.
  • Add carrot, green peas and chopped tomato.Adjust salt and cook for 5 minutes.Add porotta peaces and mix well.
  • Add beaten egg and Saute until dry and separated from another.

Oatmeal Yogurt Muffins With Nutella Filling



1.Oatmeal(powdered)-3/4cup
    All purpose flour-3/4cup
    Baking powder-1/2tsp
    Baking Soda-1/8tsp
    Salt-a pinch
2.Eggs-2
   Sugar-3/4cup
   Refined oil-1/2cup
   Vanilla essence-1/2tsp
3. Yogurt-1/2cup
4.Nutella-12tsp





  • Preheat oven to 170 degrees.
  • Line a muffin pan with paper liners.
  • Sift together oatmeal,all purpose flour,baking powder,baking soda and salt.
  • In a mixing bowl beat eggs and sugar until light and fluffy.Add in vegetable oil and vanilla essence.Beat well.Add dry ingredients alternately with yogurt.Stir until just blended.
  • Keep it aside for 15 minutes.Spoon  batter and nutella into the prepared muffin cups,about 3/4 full.

  • Bake until golden and a toothpick inserted in the center comes out clean.(25-30 minutes.)

Dates Pickle



1.Dates-1/2kg (chopped)
   Turmeric powder-1/2tsp
   Water-2cups
   Salt
2.Garlic(chopped0-1/2cup
   Ginger(chopped)-1/4cup
   Green chilly-3
4.Chilly powder-2tsp
   Asafoetida powder (kayam)-1/4tsp
   Fenugreek powder (uluva podi)-1/4tsp
5.Gingelly oil-2tbsp
   Mustard seeds-1tsp
   Curry leaves-4springs
6.Vinegar-6tbsp






  • Cook dates with water ,turmeric powder and salt.It become a thick consistency swichoff flame and keep  it aside.
  • Heat oil in a pan and splutter mustard seeds.Add curry leaves,ginger ,garlic and green chilly.Saute for 2 minutes.Add chilly powder and fry for few seconds.Add cooked dates asafoetida powder and fenugreek powder.Adjust salt and allow it to a boil.
  • Add vinegar and adjust salt.Remove from heat.Serve with rice.Keep refrigerated.

Ethakka Appam /Pazham Pori /Banana Fritters



1.Ethapazham/Ripe Plantain-3 (split lengthwise)
2.Rice Flour-1/4cup
   All purpose flour-3/4cup
   Baking soda-a pinch
   Turmeric powder-1/4tsp
   Cardamom powder-1/2tsp
   Sugar-1&1/2tbsp
   Salt-1/8 tsp
   Water(milk)
3.Oil-for frying







  • Mix dry ingredients in a large bowl.Add water/milk to form a thick batter (idly batter consistency)
  • Heat oil in a kadai.
  • Dip each pieces in batter and deep fry until golden.
