Pineapple Upside Down Cake





For topping
Pineapple slices (Canned/fresh)-10
Butter-2tbsp
Light Brown sugar-1/2cup

For the batter
1.All purpose flour-1& 1/4 cup
   Baking powder-1tsp
2.Sugar-1cup
   Butter-125gms
3.Egg-2
4.Pineapple juice-1/2cup



  • Preheat oven to 170 degrees.
  • Cook butter & brown sugar till it caramelize.Pour into a greased cake pan.
  • Arrange pineapple slices over brown sugar mixture in bottom of pan

  • Combine flour, salt  and  baking powder.
  • In a mixing bowl beat butter and sugar until light and fluffy.Add eggs one bye one and beat well.Add dry ingredients to the mixture alternately with pineapple juice.Stir until just blended.
  • Pour the mixture on the top of pineapple slices.
  • Bake for 40-45minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Invert the cake on to a serving plate.

Sweet Pachadi (without yoghurt)



1.Pineapple(chopped)-1
   Banana(chopped)-1
   Cashew nuts-1/4cup
   Chilly Powder-1tsp
   Sugar-2tsp
   Salt
2.Coconut-1/2cup
   Crushed Mustard seeds-1tsp
3.Green grapes-3/4cup
4.Coconut oil-2tsp
   Mustard seeds-1tsp
   Pearl onion(chopped)-2
   Dry red chilly-2
   Curry leaves



1. Cook pineapple banana,cashew nuts, chilly powder, sugar & salt.
2. Grind coconut into a smooth paste.
3. Add coconut paste and crushed mustard seeds in to the pineapple mix.
4. It become a thick consistency,add grapes and remove from fire.
5.Heat coconut oil in a  pan and add mustard seeds.When they splutter add pearl onions,red chillies and curry leaves and fry it for a minute. Remove from heat and pour it over the Pachadi.

VEGETABLE STEW WITH PINEAPPLE



Cooked Chana dal-1/2 cup
Pineapple-1/2 cup
Onion-1/2 cup
Carrot-1/2 cup
Potato-1/2 cup
Green chilly-3
Ginger-garlic paste-1tsp
Turmeric powder-1/4tsp
Coriander powder-1/2tsp
Garam masala-1/2tsp
Thin coconut milk-2cup
Thick coconut milk-1cup
Curry leaves-1spring
METHOD
1. Cut vegetables in to square shapes.

2. Heat oil in a pan and add mustard seeds.
3. Add vegetables and fry for 5minuts.
4. Add ginger garlic paste and stir till the vegetables become soft.
5. Add turmeric powder, coriander powder and garam masala and sauté for a minute.
6. Add cooked chana dal, thin coconut milk and salt.
7. When the vegetables are done, add thick coconut milk.
8. When it begins to boil, add curry leaves and remove from fire.
9. Serve with naan and chappathies.

PINEAPPLE PACHADI




Pineapple (grated)-1
Green chillies-2
Sugar-1tbsp
Salt-to taste
Grated coconut-1/2
Cumin seeds-1/4tbsp
Crushed mustard seeds-1/2tbsp
Yoghurt-250gms
Chopped shallots-2
Mustard seeds-1tsp
Curry leaves-1spring



  •  Cook grated pineapple with chopped green chilly, sugar & salt.
  • Grind coconut with cumin seeds to a smooth paste.
  •  Add coconut paste and crushed mustard seeds in to the pineapple.
  •  It become a thick consistency, remove from fire.
  • Add yoghurt and mix well.
  • Season with chopped shallots, mustard and curry leaves.

COCONUT-PINEAPPLE HALWA



Grated pinapple-3cups
Grated coconut-2cups
Sugar-2cups
Lemon juice-1tbsp
Pineapple essence-3drops
Cardamom powder-1tsp
Cashew nuts-10
Ghee-4tbsp

METHOD
•Heat 2tbsp ghee in a nonstick pan and fry cashew nuts.
•Add pineapple ,coconut and sugar

•Stir continuously and make it in to a thick halwa form
•Add lemon juice, pineapple essence, cardamom powder and the remaining ghee.
•Stir till the mixture is well cooked and leaves the sides of the vessel.
•Pour into a dish and decorate with fried cashew nuts.

PINEAPPLE PRADHAMAN



INGREDIENTS
Pineapple (grated) -1
Jaggery -250gm
Cardamom powder -1tbsp
Cashew nut -15
Pea nut -10gm
Thin coconut milk -3cups
Thick coconut milk-1cup
Rice flour -2tsp
Ghee -4tbsp

GRATED PINEAPPLE

GRATED JAGGERY



• Heat ghee in a heavy bottom pan and fry cashew nuts and pea nuts.Keep aside.
• In the same pan add melted jaggery and grated pineapple

• It become a thick consistency add thin coconut milk


• When it thickens, add thick coconut milk mixed with rice powder

• When the payasam starts boiling remove from fire and add cardamom powder
• Garnish with fried cashew nuts and peanuts
