Ragi Oats Puttu



Oats-1cup
Ragi Powder-1cup
Grated Carrot-2
Water
Salt


  • Dry roast oats and ragi separately for 2 minutes and keep it aside.
  • Wet ragi and oats separately with required quantity of water and salt.
  • Transfer the mix into puttu maker with grated carrot alternately.
  • Place the puttu maker on a pressure cooker and steam for 3-5 minutes.

Figs and Caramel Loaf Cake



This recipe is adapted from Nithya's 4th sence cooking.com.
here is a wonderful recipe of figs and caramel loaf cake.

I hope every one enjoy this recipe.


1.All purpose flolur-1&1/2cup
   Baking powder-1tsp
   Baking soda-1/4tsp
2.Butter-1/2cup
   Sugar-1/2-3/4cup
   Eggs-2
3.Figs-15
   Sugar-2tbsp
   Water-1/2cup



  • Mix together flour baking powder and baking soda.
  • Heat 2 tbsp sugar over low heat,stirring constantly,until lightly brown.Add 1/2cup water and chopped figs carefully.Cook until all the water has evaporated.

  • Preheat oven to 150 degree C
  • In a mixing bowl beat butter and sugar until light and fluffy.Beat in the eggs one at a time.Add sieved flour and stir until just blended.Gently fold in the fig mixture with a spoon.

  • Fill the mold with batter up to 3/4th.Bake until  golden or a toothpick inserted in the center comes out clean, about 45-50 minutes.

Oatmeal Choco chips Cookies



Oats-1&1/2cups
All purpose flour-3/4cup
Cinnamon powder-1/2tsp
Baking soda-1/2tsp
Egg-1
Refined oil-1/2cup
Firmly packed Brown sugar-1/2cup
Chocolate chips-1/2cup


Combine all purpose flour,baking soda and cinnamon powder.
In a bowl beat oil and powdered brown sugar until creamy.Add eggs and beat well.Add oats and stir until just blended.Add chocolate chips and mix well.
Preheat oven to 175 degrees.
Drop a tablespoonfuls of dough onto ungreased  cookie sheet.
Bake 10-12 minutes or until light brown.

Gulab Jamun



1.Milk Powder-1cup
   All purpose Flour-2tbsp
   Baking Soda-1/4tsp
   Ghee-2tbsp
   Milk-1/2cup
2.Sugar-11/2cup
   Water-1 1/2cup
   Crushed Cardamom seeds-5
3.Refined oil/Ghee




  • Mix sugar,water and crushed cardamom seeds in a pan.Bring to boil and simmer for 10 minutes.Set aside
  • In a bowl,add milk powder,all purpose flour and baking soda.Mix well.Add 2tbsp ghee and mix it with dry ingredients..Add milk little by little and make a soft dough.Cover and keep it aside for 25-30 minutes.
  • Divide the dough into 20 portions.Shape into smooth balls.
  • The balls are deep fried in refined oil/ghee till the color becomes golden brown.
  • Add fried gulab jamuns into the warm syrup.The balls should soak in the syrup for at least 2 hours before serving.

Chocolate chips Oatmeal Muffins



1.Oats-1cup
   Milk-1cup
2.All purpose flour-1cup
   Baking powder-1/2tsp
   Baking Soda-1/4tsp
   Cinnamon powder-1/2tsp
3.Egg-1
   Refined oil-1/2cup
   Powdered Brown Sugar-1/2 cup
5.Chocolate chips-1/2cup



  • Preheat oven to 160 degree C.
  • Soak oats in milk for 20 minutes.
  • Combine all-purpose flour,baking powder, baking soda and cinnamon powder.
  • In a mixing bowl beat oil, brown sugar and egg.Add oats mixture and mix well.Add dry ingredients and stir until just blended.Gently fold in the chocolate chips with a spoon.
  • Fill muffin cups 3/4 full.Bake until  golden and a toothpick inserted in the center comes out clean, about 25-30 minutes.

Idichakka Thoran (Tender Jackfruit Stir Fry)



1.Tender jack fruit-250gms
2.Cooked green gram-1/2cup
3.Salt
4.Coconut-1/2cup
   Turmeric powder-1/2tsp
   Chilly powder-1/2tsp
   Green pepper corns-1-2tsp
   Cumin seeds-1tsp
   Garlic cloves-3
5.Coconut oil-1tsp
   Mustard seeds-1tsp
   Dry red chilly-3
   Curry leaves-2springs



  • Cut tender jack fruit into 1 inch square pieces.Steam them for about 10 minutes.Shred the pieces using a food processor.
  • Crush together coconut, turmeric powder, chilly powder, green pepper corns, garlic and cumin seeds.
  • Heat 1 tbsp oil in a pan and splutter mustard seeds.Fry dry red chilly and curry leaves.Add Shredded jack fruit, coconut ,cooked green gram and salt and mix well.Cover and cook on low heat for about 5 minutes.
  • Serve with rice.

Strawberry Muffins



1.All purpose flour-1cup
   Whole wheat flour-1cup
   Baking Soda-1tsp

2.Fresh Strawberry(chopped )-1cup
   Sugar-1/4cup
Mix chopped Strawberries with 1/4 cup sugar.Cover and refrigerate overnight.Once they are soft, mash the strawberries with a spoon.

3.Butter-1/2cup
   Powdered Sugar-3/4 cup
   Vanilla extract-1/4tsp
4.Egg-2
5.Milk-1/3cup



  • Preheat oven to 150 degree C.
